2 slices of sourdough bread

1 tablespoon unsalted butter, softened

2 large eggs

1/4 cup Hatch green chilies, diced (either fresh or roasted)

1/2 cup shredded sharp cheddar cheese

1/4 cup crumbled feta cheese

1/4 teaspoon smoked paprika

Salt and pepper, to taste

Fresh cilantro or parsley, for garnish (optional)

Prepare the Filling: In a small mixing bowl, combine the diced Hatch green chilies with the shredded sharp cheddar cheese, crumbled feta cheese, smoked paprika, and a pinch of salt and pepper. Stir until all ingredients are thoroughly mixed and set the bowl aside.
