1 pound ground turkey

2 cups cooked jasmine rice

1 cup roasted Hatch green chilies, diced (canned may be used if out of season)

1 cup black beans, drained and rinsed

1 cup corn kernels (can be fresh or frozen)

½ cup onion, diced

2 cloves garlic, minced

1 teaspoon ground cumin

1 teaspoon smoked paprika

½ teaspoon salt

½ teaspoon black pepper

1 tablespoon olive oil

4 large lettuce leaves (for wraps) or 4 large tortillas (your choice)

½ cup shredded cheddar cheese (optional)

Fresh cilantro, chopped (for garnish)

Lime wedges (for serving)

Instructions
 

Cook the Turkey: In a large skillet, heat the olive oil over medium heat. Add the diced onion and sauté for about 3-4 minutes, or until translucent. Then, stir in the minced garlic and cook for an additional minute until fragrant.

    Brown the Meat: Raise the heat to medium-high and add the ground turkey to the skillet. Use a wooden spoon to break it apart, stirring occasionally until the meat is evenly browned and cooked through, about 7-10 minutes.

      Season the Mixture: Incorporate the diced Hatch green chilies, black beans, corn, ground cumin, smoked paprika, salt, and black pepper into the skillet. Stir everything well to combine and let it heat through for another 3-4 minutes, allowing the flavors to meld together.

        Prepare the Wraps: If you are using large tortillas, warm them in a dry skillet for about a minute on each side, or microwave them for a few seconds until pliable. If opting for lettuce leaves, wash them thoroughly and gently pat them dry.

          Assemble: Spoon approximately ½ cup of the turkey mixture onto each tortilla or lettuce leaf. If desired, add a sprinkle of shredded cheddar cheese and a handful of chopped cilantro for an extra burst of flavor.

            Roll it Up: For tortillas, fold in the sides and then roll from the bottom up to securely wrap the filling. For lettuce wraps, simply fold the leaves over the turkey mixture to create a pocket.
