Ingredients

4 large eggs

1/2 cup whole milk

1 cup sharp shredded cheddar cheese, divided

1 cup diced hatch green chilies (preferably roasted and peeled)

1/2 cup finely diced onion

1/2 teaspoon garlic powder

1/2 teaspoon ground cumin

Salt and freshly ground black pepper, to taste

4 large flour tortillas

1 tablespoon extra virgin olive oil

Fresh cilantro leaves for garnish (optional)

Salsa for serving (optional)

Instructions

Prepare the Egg Mixture: In a large mixing bowl, vigorously whisk together the eggs and milk until the mixture is smooth and fluffy. Fold in the roasted hatch green chilies, diced onion, garlic powder, cumin, and half of the shredded cheddar cheese. Season this mixture with salt and pepper according to your taste.

Cook the Eggs: Heat the olive oil in a large non-stick skillet over medium heat. Once the oil is shimmering, pour the egg mixture into the skillet. Gently stir with a spatula, cooking for about 5-7 minutes. Stir until the eggs are just set, ensuring they remain slightly creamy and soft.

Assemble the Burritos: On a clean flat surface, lay out each flour tortilla. Spoon an equal portion of the scrambled egg mixture onto the center of each tortilla. Sprinkle the remaining cheddar cheese evenly over the top of the egg mixture.

Roll the Burritos: Carefully fold the sides of each tortilla over the filling, then starting from the bottom, roll it up tightly to enclose the filling completely. Repeat this rolling process for all tortillas.

Toast the Burritos: Wipe out the skillet with a paper towel and return it to medium heat. Place the rolled burritos seam side down in the skillet. Toast each burrito for about 2-3 minutes per side, or until the tortillas are golden brown and crispy.

Serve: Once toasted, remove the burritos from the skillet and allow them to cool for a moment. Slice each burrito in half diagonally, garnish with fresh cilantro if desired, and serve with your favorite salsa on the side.

Presentation Tips: For an impressive presentation, place the burrito halves on a colorful plate, drizzling a little salsa over the top. Add a small bowl of additional salsa on the side along with a sprig of cilantro for added brightness.
