1 cup almond flour (or substitute with whole wheat flour)

1/2 cup maple syrup or honey

1/3 cup coconut oil, melted

1 teaspoon vanilla extract

1 teaspoon baking powder

1/2 teaspoon salt

1 cup fresh or frozen blueberries

1/2 teaspoon cinnamon (optional)

1/4 cup chopped nuts (such as walnuts or almonds, optional)

Preheat the Oven: Begin by preheating your oven to 350°F (175°C). Prepare an 8x8 inch baking dish by lining it with parchment paper, allowing some excess paper to hang over the edges. This will make it easier to lift the bars out after baking.

    Mix the Dry Ingredients: In a large mixing bowl, combine the rolled oats, almond flour, baking powder, and salt. If you're including cinnamon, add it at this stage. Use a whisk or a wooden spoon to mix everything thoroughly, ensuring an even distribution of all dry ingredients.

      Prepare the Wet Ingredients: In a separate bowl, mix the melted coconut oil, maple syrup (or honey), and vanilla extract together. Stir well until the mixture is completely smooth and combined.

        Combine Wet and Dry Ingredients: Pour the wet mixture over the dry ingredients in the first bowl. Gently mix until just combined—be careful not to over-mix. Once combined, fold in the blueberries along with any chopped nuts, ensuring they’re evenly incorporated without breaking the blueberries.
