Healthy Chickpea Salad Wraps

1 can (15 oz) chickpeas, drained and rinsed thoroughly

1/2 cup plain Greek yogurt (or a vegan alternative, if desired)

1 tablespoon extra virgin olive oil

1 tablespoon fresh lemon juice

1 teaspoon Dijon mustard

1/2 teaspoon garlic powder

1/2 teaspoon onion powder

1/2 teaspoon ground cumin

Salt and freshly ground black pepper to taste

1/2 cup cucumber, diced into small cubes

1/2 cup bell pepper, diced (any color for visual appeal)

1/4 cup red onion, finely chopped

1/4 cup parsley or cilantro, freshly chopped

4 large whole grain or spinach tortillas

Optional: Sliced avocado and a handful of mixed greens for serving

Instructions
 

In a large mixing bowl, add the drained and rinsed chickpeas. Using a fork or a potato masher, gently mash the chickpeas, ensuring a chunky consistency by leaving some whole. This creates a delightful texture in your wraps.

    In a separate bowl, whisk together the Greek yogurt, olive oil, lemon juice, Dijon mustard, garlic powder, onion powder, ground cumin, salt, and freshly ground black pepper. Mix until the ingredients are thoroughly blended and creamy.

      Pour the yogurt dressing over the mashed chickpeas. Carefully fold the mixture together with a spatula or spoon until the chickpeas are evenly coated with the dressing.

        To the chickpea mixture, add the diced cucumber, bell pepper, finely chopped red onion, and freshly chopped herbs (parsley or cilantro). Stir gently to combine all ingredients, tasting and adjusting the seasoning with more salt or pepper as needed.

          Take one tortilla and lay it flat on a clean surface or a plate. Spoon an equal portion of the chickpea salad mixture onto the center of the tortilla, creating a generous filling.

            If desired, add slices of avocado on top of the chickpea mixture, along with a handful of mixed greens for an extra burst of flavor and nutrition.

              To wrap the tortilla, fold in the sides over the filling to create a pocket. Then, start rolling from the bottom upwards, tucking in the filling as you go, until you have a tightly enclosed wrap.
