2 ripe bananas, thoroughly mashed

1 cup rolled oats (use gluten-free oats for a gluten-free version)

1/2 cup almond flour (or your favorite flour)

1/4 cup honey or pure maple syrup (for sweetness)

1/4 cup unsweetened nut butter (choose from peanut, almond, or sunflower seed butter)

1/2 teaspoon vanilla extract (for flavor)

1/2 teaspoon baking soda (to help cookies rise)

1/4 teaspoon salt (to enhance flavor)

1/2 teaspoon ground cinnamon (for warmth and aroma)

1/3 cup dark chocolate chips or raisins (optional, for a fun twist)

1/4 cup chopped nuts (walnuts or pecans, optional, for added crunch)

Instructions
 

Preheat your oven to 350°F (175°C). Line a baking sheet with parchment paper to help prevent sticking.

    In a large mixing bowl, combine the thoroughly mashed bananas, almond flour, honey (or maple syrup), nut butter, and vanilla extract. Mix these ingredients together until you achieve a smooth and cohesive mixture.

      In a separate bowl, combine the rolled oats, baking soda, salt, and ground cinnamon. Mix thoroughly to ensure the dry ingredients are well blended.

        Carefully add the dry mixture to the wet mixture, stirring gently until all ingredients are fully incorporated. If you desire, fold in the dark chocolate chips and chopped nuts at this point for added flavor and texture.

          Using a tablespoon or a cookie scoop, drop dollops of the cookie dough onto the prepared baking sheet, spacing them about 2 inches apart to allow for slight expansion.

            With the back of a spoon, lightly flatten each cookie, as they won’t spread much during baking.

              Bake in the preheated oven for 12-15 minutes, or until the edges turn a lovely golden brown.

                Once baked, remove the cookies from the oven and let them cool on the baking sheet for 5 minutes. Afterward, gently transfer them to a wire rack to cool completely.
