1 lb ground turkey

1 tablespoon olive oil

1 small onion, finely chopped

2 cloves garlic, minced

1 bell pepper (red or yellow), diced

1 cup mushrooms, chopped

1 carrot, grated

1 tablespoon fresh ginger, minced

1/4 cup low sodium soy sauce

1 tablespoon sesame oil

1 tablespoon rice vinegar

1 teaspoon sriracha (adjust according to spice preference)

Salt and black pepper, to taste

1 head of butter or romaine lettuce, leaves separated and thoroughly washed

1/4 cup green onions, sliced (for garnish)

Sesame seeds (optional, for garnish)

Instructions
 

Sauté Aromatics: In a large skillet, heat the olive oil over medium heat. Once hot, add the finely chopped onion and sauté for about 2-3 minutes until it becomes translucent. Then, stir in the minced garlic and ginger, cooking for an additional minute until the mixture is fragrant.

    Cook Turkey: Increase the heat slightly and add the ground turkey to the skillet. Using a spatula, break the meat apart and cook for 5-7 minutes until browned and fully cooked through. If there’s excess fat, drain it from the skillet.
