In a large skillet, heat olive oil over medium heat. Add diced onion and sauté until translucent, about 4-5 minutes.
Add minced garlic and mushrooms to the skillet and cook for an additional 3-4 minutes until mushrooms are tender.
Stir in the chopped spinach and cook just until wilted, about 2 minutes.
In a large mixing bowl, combine shredded turkey, sautéed vegetable mixture, heavy cream, chicken broth, lemon juice, dried thyme, basil, smoked paprika, salt, and pepper. Mix well to combine.
Transfer the mixture into a greased baking dish (about 9x13 inches). Ensure an even distribution throughout the dish.
Sprinkle the herbed cheese blend evenly on top of the turkey and vegetable mixture.
In a small bowl, combine the breadcrumbs with a drizzle of olive oil, salt, and pepper. Mix to ensure even coating.
Sprinkle the breadcrumb mixture over the cheese layer for a crunchy topping.
Bake in the preheated oven for 30-35 minutes, or until the top is golden brown and the filling is bubbly.
Remove from the oven and let it sit for 10 minutes to set. Garnish with fresh parsley before serving.
