1 lb ground turkey

2 medium sweet potatoes, peeled and cut into 1/2-inch cubes

1 medium onion, diced finely

2 cloves garlic, minced

1 red bell pepper, diced

1 cup corn kernels (you can use fresh or frozen)

1 can (15 oz) black beans, drained and rinsed

1 teaspoon smoked paprika

1 teaspoon ground cumin

1/2 teaspoon chili powder

Salt and pepper, to taste

2 tablespoons olive oil

Fresh cilantro, chopped (for garnish)

1 ripe avocado, sliced (for serving)

Lime wedges (for serving)

Instructions
 

Heat the Skillet: In a large skillet, warm the olive oil over medium heat. Once the oil is shimmering, add the finely chopped onion. Sauté for approximately 3-4 minutes, or until the onion becomes translucent and fragrant.

    Sauté the Vegetables: Stir in the minced garlic and diced red bell pepper. Continue to sauté for an additional 2-3 minutes, allowing the bell pepper to soften and the garlic to become aromatic.

      Cook the Sweet Potatoes: Add the diced sweet potatoes to the skillet. Season with smoked paprika, ground cumin, chili powder, salt, and pepper. Mix well and cover the skillet with a lid.
