1 cup green or brown lentils, rinsed and drained

2 tablespoons olive oil

1 medium onion, finely diced

2 cloves garlic, minced

2 medium carrots, peeled and diced

2 celery stalks, diced

1 red or yellow bell pepper, diced

1 medium zucchini, diced

1 cup diced tomatoes (canned or fresh)

1 teaspoon dried thyme

1 teaspoon dried oregano

1 bay leaf

6 cups vegetable broth

2 cups fresh spinach or kale, stems removed and chopped

Salt and freshly ground black pepper to taste

Fresh parsley, chopped (for garnish)

Instructions
 

Sauté the Aromatics: In a large, heavy-bottomed pot, heat the olive oil over medium heat. Once the oil is shimmering, add the diced onion and minced garlic. Sauté these ingredients until the onion becomes translucent and fragrant, approximately 5 minutes.

    Add Vegetables: Incorporate the diced carrots, celery, and bell pepper into the pot. Continue cooking for another 5 minutes, stirring occasionally, until the vegetables are softened and begin to release their flavors.

      Incorporate Lentils & Spices: To the pot, add the rinsed lentils, diced tomatoes, dried thyme, dried oregano, and the bay leaf. Season the mixture with a pinch of salt and freshly ground black pepper. Stir well to ensure all the ingredients are thoroughly combined.

        Pour in the Broth: Carefully pour in the vegetable broth, bringing the mixture to a rolling boil. Once boiling, reduce the heat to low to maintain a gentle simmer. Cover the pot and let the soup simmer for about 25-30 minutes, or until the lentils are tender but not mushy.

          Add Greens: In the final 5 minutes of cooking, stir in the chopped spinach or kale until just wilted. Taste the soup and adjust the seasoning with additional salt and black pepper, as needed.
