2 cups fresh broccoli florets

3 cups sharp cheddar cheese, shredded

1 cup mozzarella cheese, shredded

3 tablespoons unsalted butter

1/4 cup all-purpose flour

3 cups whole milk

1 teaspoon garlic powder

1 teaspoon onion powder

1/2 teaspoon smoked paprika

Salt and black pepper, to taste

1/2 cup breadcrumbs (optional, for topping)

2 tablespoons olive oil (optional, for breadcrumb mixture)

Instructions
 

Cook the Pasta and Broccoli: In a large pot, bring salted water to a rolling boil. Add the elbow macaroni and cook as directed on the package until al dente. Approximately 3 minutes before the pasta is done, add the fresh broccoli florets to the pot. Drain both the macaroni and broccoli, then set aside.

    Prepare the Cheese Sauce: In a spacious saucepan over medium heat, melt the unsalted butter. Once melted, gradually whisk in the all-purpose flour, stirring continuously for about 2 minutes until it develops a smooth paste. Slowly pour in the whole milk while whisking vigorously to prevent lumps from forming. Continue to cook for about 5-7 minutes, allowing the mixture to thicken slightly until it coats the back of a spoon.

      Season the Sauce: Stir in the garlic powder, onion powder, smoked paprika, and season with salt and pepper to taste. Mix well to ensure the seasonings are evenly distributed.
