Honey Garlic Glazed Meatloaf Minis

Ingredients
  

1 lb ground beef (or a blend of ground beef and pork for added flavor)

1/2 cup Italian-style breadcrumbs for extra seasoning

1/4 cup milk to keep the meatloaf moist

1/4 cup finely diced onion for aromatic flavor

2 cloves garlic, minced for an infused taste

1 large egg to bind the mixture

1 tsp Worcestershire sauce for depth of flavor

Salt and pepper, to taste

1/2 cup ketchup for the base of the glaze

1/4 cup honey for sweetness

2 tbsp soy sauce for umami richness

1 tbsp apple cider vinegar for a tangy twist

1/2 tsp red pepper flakes (optional) for a bit of heat

Fresh parsley, chopped, for garnish

Instructions
 

Preheat the Oven: Begin by preheating your oven to 350°F (175°C). While the oven is heating, lightly grease a muffin tin or mini loaf pan to prevent sticking.

    Prepare the Meat Mixture: In a large mixing bowl, combine the ground beef, Italian breadcrumbs, milk, diced onion, minced garlic, egg, Worcestershire sauce, and a sprinkle of salt and pepper. Mix the ingredients gently until they are well incorporated, taking care not to overwork the meat to maintain a tender texture.

      Form the Minis: Using your hands, scoop approximately 1/4 cup of the meat mixture and mold it into a mini loaf shape. Place each mini meatloaf into the prepared muffin tin or loaf pan, ensuring they have enough space in between for even cooking.

        Prepare the Honey Garlic Glaze: In a small bowl, whisk together the ketchup, honey, soy sauce, apple cider vinegar, and red pepper flakes (if using). This mixture will create a delightful sweet and savory glaze.
