Ingredients

1 pound large shrimp, peeled and deveined

1 cup walnuts

1/2 cup cornstarch

1/2 cup all-purpose flour

2 large eggs, beaten

1 cup milk

1/2 teaspoon salt

1/4 teaspoon black pepper

Vegetable oil, for frying

1/2 cup honey

3 tablespoons mayonnaise

1 tablespoon sweetened condensed milk

1 tablespoon fresh lemon juice

Green onions, sliced, for garnish

Sesame seeds, for garnish

Instructions

Prepare the Candied Walnuts: In a medium saucepan, place 1 cup of walnuts and add enough water to cover them completely. Bring the water to a boil, then drain the walnuts. Return the walnuts to the pan, adding 1/2 cup of sugar and 1/2 cup of water. Cook over medium heat, stirring frequently, until the mixture thickens and forms a syrup that clings to the walnuts, about 10-12 minutes. Once done, remove from heat and spread the walnuts onto a sheet of parchment paper to cool and harden.

Make the Breading Mixture: In a large mixing bowl, combine the cornstarch, all-purpose flour, salt, and black pepper. In a separate bowl, whisk together the beaten eggs and milk until well blended.

Coat the Shrimp: Take each shrimp and first dip it into the cornstarch mixture, ensuring it is thoroughly coated. Then, transfer the shrimp to the egg and milk mixture, allowing the excess to drip off. Finally, return the shrimp to the cornstarch mixture for a second coating, ensuring they are well-covered.

Fry the Shrimp: Heat vegetable oil in a deep skillet over medium-high heat until it reaches around 350°F. Carefully add the breaded shrimp to the hot oil in batches, ensuring not to overcrowd the pan. Fry each batch for about 2-3 minutes on each side or until golden brown and crispy. Use a slotted spoon to transfer the shrimp to a plate lined with paper towels to absorb excess oil.

Prepare the Sauce: In a small bowl, whisk together the honey, mayonnaise, sweetened condensed milk, and fresh lemon juice until the mixture is smooth and well combined.

Toss and Combine: In a large mixing bowl, gently toss the hot, crispy shrimp with the luscious honey sauce until they are evenly coated. Add in the cooled candied walnuts and mix gently to combine all ingredients without breaking the shrimp.

Garnish and Serve: Transfer the honey walnut shrimp to a beautiful serving platter. Finish with a sprinkle of sliced green onions and sesame seeds on top for an elegant touch.
