Iced Peach Mint Tea

4 ripe peaches, pitted and sliced

8 cups of water (divided)

4 tea bags (black or green tea)

1/4 cup honey (adjust sweetness to taste)

1/4 cup fresh mint leaves, plus extra for garnish

Ice cubes

Lemon slices (for garnish)

Instructions
 

In a medium saucepan, bring 4 cups of water to a rolling boil over medium-high heat.

    Once the water reaches a boil, remove it from the heat and add the tea bags. Let the tea steep for about 5 minutes, then carefully remove and discard the tea bags.

      While the tea is steeping, place the sliced peaches into a blender along with the remaining 4 cups of water. Blend everything until you achieve a smooth puree.

        To strain the peach mixture, pour it through a fine mesh strainer into a large pitcher, pressing gently to extract as much liquid as possible and leaving behind the pulp.

          While the peach puree is still warm, stir in the honey, ensuring it dissolves completely for an even sweetness.

            Pour the brewed tea into the pitcher with the peach mixture and stir well to combine.

              Add the fresh mint leaves into the pitcher and gently muddle them using a wooden spoon to release their aromatic oils and flavor into the drink.

                Allow the mixture to cool down to room temperature, then transfer the pitcher to the refrigerator. Chill for at least 1 hour or until thoroughly cold.

                  To serve, fill tall glasses with ice cubes, pour the refreshing iced peach mint tea over the ice, and garnish each glass with extra mint leaves and a slice of lemon for a zesty touch.
