Ingredients

2 cups all-purpose flour

1 tablespoon baking powder

1/2 teaspoon baking soda

1/2 teaspoon salt

6 tablespoons unsalted butter, cold and cubed

1 cup shredded sharp cheddar cheese

1/2 cup finely chopped fresh jalapeños (seeds removed for less heat)

3/4 cup buttermilk (or substitute with milk mixed with a splash of vinegar)

1 tablespoon honey (optional, for a touch of sweetness)

Extra shredded cheese and jalapeño slices for topping (optional)

Instructions

Preheat the Oven: Begin by preheating your oven to 425°F (220°C). Prepare a baking sheet by lining it with parchment paper to prevent sticking.

Whisk Together Dry Ingredients: In a large mixing bowl, combine the all-purpose flour, baking powder, baking soda, and salt. Whisk these ingredients together thoroughly to ensure uniform distribution.

Cut Butter into Dry Ingredients: Add the cold, cubed butter to the flour mixture. Using a pastry cutter, fork, or your fingertips, work the butter into the flour until the mixture resembles coarse breadcrumbs or small pebbles.

Incorporate Cheese and Jalapeños: Gently fold in the shredded sharp cheddar cheese and the finely chopped jalapeños, making sure they are evenly mixed throughout the flour mixture.

Mix Wet Ingredients: In a smaller bowl, whisk together the buttermilk and honey (if you’re using it) until fully integrated.

Combine Wet and Dry Mixtures: Pour the liquid ingredients into the bowl with the dry ingredients. Using a spatula or wooden spoon, gently mix until just combined. Be careful not to over-mix; the dough should remain slightly sticky.

Shape the Biscuits: Turn the biscuit dough out onto a lightly floured surface. Pat it into a rectangle approximately 1 inch thick. Use a floured biscuit cutter or a glass to cut out biscuits and place them on the prepared baking sheet. If you have any leftover dough, gently gather the scraps, re-pat to 1 inch thick, and cut out more biscuits.

Add Toppings: For extra flavor and a beautiful presentation, sprinkle additional shredded cheddar cheese on top of each biscuit and place a slice of jalapeño on each one, if desired.

Bake the Biscuits: Place the baking sheet in the preheated oven and bake for 12-15 minutes, or until the biscuits are golden brown on top and have risen nicely.

Cool and Serve: Once baked, remove the biscuits from the oven and allow them to cool on a wire rack for about 5 minutes.

Enjoy Your Creation: These biscuits are best served warm. They pair wonderfully on their own, with a spread of butter, or alongside your favorite breakfast items, such as eggs and crispy bacon.
