Ingredients

1 lb ground turkey

2 cups fresh spinach, finely chopped (or 1 cup frozen spinach, fully thawed and well-drained)

1/2 cup whole wheat breadcrumbs

1/4 cup grated Parmesan cheese

1/4 cup onion, finely chopped

2 cloves garlic, minced

1 large egg

1 teaspoon dried oregano

1 teaspoon dried basil

Salt and pepper, to taste

1 cup marinara sauce, for serving

Fresh basil leaves, for garnish (optional)

Instructions

Preheat the Oven: Begin by preheating your oven to 400°F (200°C). Line a baking sheet with parchment paper or lightly grease it with cooking spray to prevent sticking.

Prepare the Spinach: If using fresh spinach, rinse it thoroughly under cold water, remove any tough stems, and chop it finely. If using frozen spinach, ensure it is completely thawed, then squeeze out excess moisture using a clean kitchen towel or paper towels.

Mix the Ingredients: In a large mixing bowl, combine the ground turkey with the chopped spinach, breadcrumbs, grated Parmesan cheese, chopped onion, minced garlic, egg, dried oregano, dried basil, and a generous pinch of salt and pepper.

Combine Thoroughly: Using your hands, gently mix the ingredients together until just blended. Be careful not to overmix, as this can lead to tougher meatballs.

Shape the Meatballs: Take about 1 tablespoon of the mixture and roll it into a ball, placing it on the prepared baking sheet. Repeat this process until all the mixture has been shaped into meatballs, ensuring they are evenly spaced out on the tray for even cooking.

Bake the Meatballs: Transfer the baking sheet to the preheated oven and bake for 20-25 minutes, or until the meatballs are cooked through, beautifully golden brown on the outside, and have reached an internal temperature of 165°F (74°C).

Warm the Sauce: While the meatballs are baking, pour the marinara sauce into a small saucepan and warm it over medium heat, stirring occasionally until heated through.

Serve: Once the meatballs are fully cooked, serve them drizzled with marinara sauce for dipping. If desired, sprinkle with fresh basil leaves for a vibrant touch.

Enjoy Your Meal: These turkey and spinach mini meatballs are excellent for small hands and can be enjoyed over pasta, in a sub sandwich, or as a healthy snack all on their own!
