1/2 cup corn, canned or frozen (thawed if frozen)

1 small carrot, grated

1/4 teaspoon garlic powder

1/4 teaspoon onion powder

1 tablespoon olive oil (for cooking)

Prepare the Veggies: In a mixing bowl, combine the chopped spinach, finely diced bell peppers, grated zucchini, corn, and grated carrot. Toss them gently to ensure even mixing. Set this mixture aside for later use.

    Combine Cheeses: In another bowl, mix the shredded cheddar and mozzarella cheeses together. Feel free to adjust the ratio according to your cheese preference for a more personalized flavor!

      Assemble the Quesadillas:

        - On a clean work surface, place one whole wheat tortilla flat.
