Ingredients

200g Kit Kat bars (reserve a few for topping)

250g digestive biscuits

100g unsalted butter, melted

600g cream cheese, softened to room temperature

200g powdered sugar

200ml heavy whipping cream

1 teaspoon vanilla extract

2 tablespoons cocoa powder

A pinch of salt

Optional: Chocolate shavings for decoration

Instructions

Prep the Base: Start by preheating your oven to 350°F (175°C). In a food processor, crush the digestive biscuits into fine crumbs. Transfer them to a mixing bowl, then pour in the melted butter. Mix thoroughly until the crumbs are well coated. Firmly press the mixture into the bottom of a 9-inch springform pan to create a solid crust. Bake this crust in the preheated oven for 10 minutes, then let it cool completely in the pan.

Prepare the Filling: In a large mixing bowl, combine the softened cream cheese and powdered sugar. Using an electric mixer, beat the mixture for about 3 minutes until it becomes smooth and creamy with no lumps.

Add Whipped Cream: In a separate bowl, pour in the heavy cream and add the vanilla extract. Whip the cream with an electric mixer until soft peaks form. Gently fold the whipped cream into the cream cheese mixture, taking care to maintain the light texture of the whipped cream.

Integrate the Kit Kats: Chop the Kit Kat bars into small, bite-sized pieces, reserving a few for later decoration. Carefully fold the chopped Kit Kats into the cream cheese mixture, followed by the cocoa powder and a pinch of salt. Mix gently until everything is well combined and no clumps remain.

Combine the Layers: Pour the cheesecake filling over the cooled digestive biscuit crust. Use a spatula to smooth the top, ensuring an even surface across the cheesecake.

Chill the Cheesecake: Cover the springform pan tightly with plastic wrap or a lid. Place it in the refrigerator to chill for at least 6 hours, although overnight is ideal to allow the cheesecake to set perfectly.

Garnish and Serve: Once the cheesecake has firmed up, carefully run a knife around the edge and release it from the springform pan. Top with the reserved chopped Kit Kats and sprinkle chocolate shavings on top for a delightful finish. Slice into 12 servings and enjoy your chilled dessert!

                Prep Time: 20 minutes | Total Time: 6 hours 30 minutes | Servings: 12

Presentation Tips: For an extra special touch, serve each slice on a dessert plate with a drizzle of chocolate sauce on the side or a dollop of whipped cream. Enjoy!
