8 oz sweet potato noodles (dangmyeon)

2 tbsp sesame oil

1 tbsp vegetable oil

1 medium onion, thinly sliced

2 cloves garlic, minced

1 carrot, julienned

1 red bell pepper, julienned

1 cup shiitake mushrooms, sliced (or any mushrooms you prefer)

1 cup spinach, washed and drained

2 green onions, chopped

3 tbsp soy sauce

1 tbsp sugar

1 tbsp sesame seeds (for garnish)

Cook the Noodles: Begin by bringing a large pot of water to a rolling boil. Once boiling, add in the sweet potato noodles and cook according to the package instructions, which is typically about 6-8 minutes. When the noodles are done, drain them in a colander and rinse under cold water to halt the cooking process. Set them aside for later.

    Prepare the Vegetables: As the noodles cook, take this time to prepare your vegetables. Slice the onion and garlic, julienne the carrot and red bell pepper, and slice the shiitake mushrooms. Make sure to rinse and drain the spinach thoroughly to remove any excess moisture.

      Sauté the Aromatics: In a large pan or wok, heat 2 tablespoons of sesame oil over medium heat. Once hot, add the minced garlic and sliced onion to the pan. Sauté the mixture for about 3-4 minutes, or until the onion becomes translucent and aromatic.

        Incorporate the Veggies: Add the julienned carrot, red bell pepper, and sliced shiitake mushrooms to the pan. Season with a sprinkle of salt and pepper. Stir-fry the vegetables for roughly 5-7 minutes, stirring continuously until they soften slightly while still retaining their vibrant color.
