8 oz fettuccine or pasta of choice

2 cups broccoli florets

4 cloves garlic, minced

1 lemon (zested and juiced)

1/4 cup extra virgin olive oil

1/4 cup freshly grated Parmesan cheese

1 teaspoon red pepper flakes (optional for heat)

Salt and pepper to taste

Fresh parsley, chopped (for garnish)

Cook the Pasta: Bring a large pot of salted water to a rolling boil. Add the fettuccine and cook according to package instructions until al dente. In the last 3 minutes of cooking, gently add the broccoli florets to the pot. Once everything is cooked, drain the pasta and broccoli, ensuring to reserve 1 cup of the starchy pasta water for later use. Set aside.

    Prepare the Chicken: While the pasta is cooking, season both sides of the chicken breasts generously with salt, pepper, and half of the lemon zest. In a large skillet, heat 2 tablespoons of olive oil over medium heat. Once the oil is shimmering, carefully add the chicken breasts. Cook for 6-7 minutes on each side, or until the chicken is fully cooked through and golden brown. Once done, transfer the chicken to a plate and allow it to rest for a few minutes before slicing it into thin strips.
