2 salmon fillets (6 oz each)

4 cups mixed greens (arugula, spinach, and kale)

1 cup cherry tomatoes, halved

1 ripe avocado, diced

1/2 cucumber, thinly sliced

1/4 red onion, thinly sliced

1/4 cup feta cheese, crumbled

1/4 cup olives (black or green), pitted and sliced

1/4 cup extra virgin olive oil

Juice of 2 freshly squeezed lemons

1 teaspoon Dijon mustard

1 teaspoon honey

Salt and freshly ground black pepper, to taste

Fresh parsley or dill, finely chopped, for garnish (optional)

Instructions
 

Cook the Salmon: Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper for easy cleanup. Place the salmon fillets on the prepared baking sheet. Drizzle each fillet with extra virgin olive oil, and sprinkle generously with salt and freshly ground black pepper. Bake in the preheated oven for 12-15 minutes, or until the salmon is opaque and flakes easily with a fork. Once done, remove from the oven and allow to cool slightly.

    Prepare the Dressing: In a small mixing bowl, whisk together the olive oil, freshly squeezed lemon juice, Dijon mustard, and honey until the mixture is smooth and well combined. Taste the dressing and adjust seasoning with salt and pepper as necessary.
