2 cups plain Greek yogurt

1/2 cup fresh lemon juice (approximately 3-4 medium lemons)

1/2 cup honey or maple syrup (adjust to your preferred sweetness level)

Zest of 2 lemons (for extra flavor)

1/4 cup water (optional, for achieving a lighter texture)

A pinch of salt (to balance flavors)

Fresh mint leaves (optional, for garnish)

Instructions
 

In a large mixing bowl, add the Greek yogurt, fresh lemon juice, honey or maple syrup, lemon zest, and a pinch of salt.

    Using a whisk, blend the ingredients together until the mixture is smooth and well combined. Taste the mixture and, if desired, add additional honey or maple syrup to enhance the sweetness.

      If you prefer your popsicles with a lighter texture, gradually stir in the water until the mixture reaches your desired consistency.

        Carefully pour the yogurt mixture into popsicle molds, ensuring to leave a small gap at the top of each mold to allow for expansion as the mixture freezes.

          Insert the popsicle sticks into the molds and transfer them to the freezer. Allow the popsicles to freeze for at least 4 to 6 hours, or until they are completely solid.

            To release the popsicles from the molds, run warm water over the outside of the molds for a few seconds, gently pulling on the sticks as needed.

              Serve the popsicles immediately, adding fresh mint leaves as a garnish if desired for a refreshing touch. Enjoy your invigorating treat!
