Ingredients

1 medium head of cauliflower (approximately 4 cups riced)

1 large egg

2 cups shredded mozzarella cheese

1/2 cup grated Parmesan cheese

1 teaspoon garlic powder

1 teaspoon dried oregano

1 teaspoon Italian seasoning

1/2 teaspoon salt

1/4 teaspoon black pepper

1/2 cup pizza sauce (for dipping)

Optional toppings: sliced olives, pepperoni, or additional cheese

Instructions

Preheat the Oven: Start by preheating your oven to 425°F (220°C). Line a baking sheet with parchment paper to prevent sticking.

Prepare the Cauliflower: Trim away the leaves and stem from the cauliflower head. Cut it into smaller florets, then place these florets in a food processor. Pulse until they achieve a rice-like consistency.

Cook the Cauliflower: Transfer the riced cauliflower into a microwave-safe bowl. Cover it with a microwave-safe lid or plastic wrap, then microwave for 5-7 minutes until softened. After cooking, allow it to cool for a few minutes to handle safely.

Extract Moisture: Once the cauliflower has cooled enough to touch, place it in a clean kitchen towel or cheesecloth. Gather the edges and twist to wring out as much moisture as possible. This step is crucial for achieving crispy breadsticks.

Mix the Dough: In a large mixing bowl, combine the drained riced cauliflower, egg, mozzarella cheese, grated Parmesan cheese, garlic powder, oregano, Italian seasoning, salt, and black pepper. Stir until all the ingredients are fully incorporated and a dough-like mixture forms.

Shape the Breadsticks: Spoon the dough onto the prepared baking sheet. Using your hands or a spatula, flatten the mixture into a rectangle about 1/2 inch thick for even cooking.

Bake the Base: Place the baking sheet in the preheated oven. Bake for about 15-20 minutes, or until the edges are golden brown and the center has set firm.

Add Toppings: Remove the baking sheet from the oven. Sprinkle on your desired toppings, such as additional mozzarella cheese, sliced olives, or pepperoni. Return to the oven and bake for an additional 5-7 minutes until the cheese melts and turns bubbly and golden.

Serve: After baking, let the breadsticks cool for a few minutes. Slice them into strips and serve warm alongside pizza sauce for dipping.
