2 ripe mangoes, peeled and diced into small cubes

1 cup fresh blackberries, rinsed and dried

1 cup Greek yogurt (choose plain or vanilla based on your preference)

1/2 cup granola (select your favorite, whether sweetened or unsweetened)

2 tablespoons honey or maple syrup (optional, for added sweetness)

1 teaspoon vanilla extract (optional, for flavor enhancement)

Fresh mint leaves for garnish

Prepare the Fruit: Begin by peeling the mangoes and cutting them into small, bite-sized cubes. Rinse the blackberries gently under cold water to remove any dirt, then allow them to dry on a paper towel to absorb excess moisture.

    Sweeten the Yogurt (Optional): In a medium mixing bowl, combine the Greek yogurt with the honey or maple syrup, and vanilla extract if using. Stir the mixture thoroughly until it is smooth and achieves your desired level of sweetness.

      Layer the Parfaits: Take your parfait cups or glasses and start building the layers. Begin with a generous layer of the sweetened yogurt, using about one-quarter of the yogurt mixture for each parfait.

        Add Mango: On top of the yogurt layer, evenly distribute half of the diced mangoes, creating a colorful and flavorful layer.

          Add Blackberries: Next, gently add a layer of fresh blackberries over the mango, utilizing half of the berries for this step to maintain a balanced flavor profile.
