Maple Pecan Pie

For the crust:

1 ½ cups all-purpose flour

½ cup unsalted butter, cold and cut into small cubes

¼ cup granulated sugar

1 large egg yolk

3-4 tablespoons cold water

¼ teaspoon salt

For the filling:

1 cup pecans, chopped (plus extra for topping)

1 cup pure maple syrup

¼ cup packed brown sugar

2 large eggs

2 tablespoons unsalted butter, melted

1 teaspoon vanilla extract

¼ teaspoon salt

½ teaspoon ground cinnamon

¼ teaspoon ground nutmeg

Instructions
 

Prepare the crust: In a large mixing bowl, combine the flour and salt. Add the cold butter and use a pastry cutter or your fingers to mix until the mixture resembles coarse crumbs. Sprinkle in the granulated sugar and mix until evenly distributed.

    Combine wet ingredients: In a small bowl, whisk together the egg yolk and 3 tablespoons of cold water. Gradually add this mixture to the flour blend, stirring with a fork until the dough begins to clump together. If the dough seems dry, incorporate more cold water, one teaspoon at a time.

      Chill the dough: Form the dough into a disk, wrap it in plastic wrap, and refrigerate for at least 30 minutes to firm up.

        Preheat the oven: While the dough chills, preheat your oven to 350°F (175°C).

          Roll out the crust: On a floured surface, roll out the chilled dough into a circle large enough to fit a 9-inch pie pan. Carefully transfer the rolled crust to the pie pan. Trim any excess dough hanging over the edges, then crimp or fork the edges for decoration. Prick the bottom of the crust with a fork to prevent bubbling during baking.

            Blind bake the crust: Line the crust with parchment paper and fill it with pie weights or dried beans to hold its shape. Bake for about 15 minutes. Afterward, remove the parchment and weights, and continue baking for an additional 5 minutes, or until the crust is lightly golden. Allow it to cool on a wire rack.

              Prepare the filling: In a medium mixing bowl, whisk together the maple syrup, brown sugar, eggs, melted butter, vanilla extract, salt, ground cinnamon, and nutmeg until the mixture is smooth and well combined.

                Add pecans: Gently fold in the chopped pecans until evenly distributed through the filling mixture.

                  Assemble the pie: Carefully pour the filling into the cooled crust, spreading it evenly. If desired, arrange additional pecans on top for decoration.

                    Bake the pie: Place the assembled pie in the preheated oven and bake for 30-35 minutes, or until the filling is set and slightly puffed up. The center should have a slight jiggle.

                      Cool and serve: Remove the pie from the oven and let it cool on a wire rack for at least 1 hour before slicing. This pie is best enjoyed warm or at room temperature, and can be elevated further with a scoop of vanilla ice cream on top.
