1 large acorn squash

3 tablespoons olive oil

4 tablespoons pure maple syrup

1 teaspoon ground cinnamon

1/2 teaspoon ground nutmeg

1/2 teaspoon sea salt

1/4 teaspoon freshly ground black pepper

1/4 cup chopped pecans (optional)

Fresh thyme leaves for garnish

    Prepare the Squash: With a sharp knife, carefully cut the acorn squash in half vertically from stem to bottom. Use a spoon to scoop out the seeds and stringy flesh from the center. Proceed to cut each half into 1-inch thick rings. You should have approximately 5-6 rings to work with.

      Make the Glaze: In a small mixing bowl, combine the olive oil, pure maple syrup, ground cinnamon, ground nutmeg, sea salt, and black pepper. Whisk the mixture thoroughly until it's well blended and smooth, creating a luscious glaze for the squash.
