1 lb maple breakfast sausage (bulk or casings removed)

1 medium sweet potato, peeled and diced into 1/2-inch cubes

1 red bell pepper, diced

1 small onion, diced

2 cloves garlic, minced

1 tsp smoked paprika

1/2 tsp ground cinnamon

Salt and pepper, to taste

3 eggs (optional, for topping)

2 tbsp olive oil

Fresh parsley, chopped (for garnish)

1/4 cup shredded cheddar cheese (optional)

Instructions
 

Cook the Sausage: In a large skillet, heat 1 tablespoon of olive oil over medium heat. Add the maple sausage to the skillet, breaking it apart with a spatula. Cook for approximately 5-7 minutes or until it is browned and fully cooked through. Once done, remove the sausage from the skillet, and set aside, leaving the drippings in the pan.

    Sauté the Vegetables: In the same skillet, add the remaining tablespoon of olive oil. Then add the diced sweet potato and cook for about 5 minutes. Stir occasionally until the sweet potato begins to soften.

      Add Aromatics: Incorporate the diced onion and red bell pepper into the skillet. Sauté for another 5-7 minutes until the onion turns translucent and the sweet potatoes are nice and tender.

        Season: Stir in the minced garlic, smoked paprika, ground cinnamon, salt, and pepper. Cook for an additional 2 minutes, allowing the flavors to mingle.

          Combine: Return the cooked sausage back into the skillet. Mix thoroughly to combine all ingredients and heat everything through on medium heat for about 2 minutes.

            Optional Eggs: If you decide to use eggs, create small wells in the mixture with a spoon and crack one egg into each well. Cover the skillet with a lid and cook until the eggs are set to your preference, roughly 4-5 minutes for runny yolks.

              Cheese & Garnish: If desired, sprinkle shredded cheddar cheese over the skillet mixture. Cover the skillet again for a couple of minutes, allowing the cheese to melt. Finish by garnishing with freshly chopped parsley.
