1 can (15 oz) chickpeas, drained and rinsed

2 cups fresh spinach, thoroughly washed and roughly chopped

1/2 cup red bell pepper, finely diced

1/4 cup red onion, finely diced

1/2 cup cucumber, peeled and diced

1/4 cup feta cheese, crumbled

1/4 cup tahini sauce

2 tablespoons fresh lemon juice

1 teaspoon garlic powder

1 teaspoon ground cumin

Salt and black pepper to taste

4 large whole wheat tortillas or wraps

Fresh parsley, chopped (for garnish, optional)

      Make the Dressing: In a small mixing bowl, whisk together the tahini sauce, freshly squeezed lemon juice, garlic powder, ground cumin, and a sprinkle of salt and black pepper. If the mixture appears too thick, stir in a tablespoon of water until you reach a salad dressing-like consistency that’s easy to drizzle.
