4 large whole wheat tortillas

1 cup hummus (store-bought or homemade)

1 cup crumbled feta cheese

1 cup roasted red peppers (jarred or homemade), finely chopped

1 cup fresh spinach, roughly chopped

½ cup Kalamata olives, pitted and thinly sliced

1 cup shredded mozzarella cheese

2 tablespoons extra virgin olive oil

1 teaspoon dried oregano

Salt and freshly ground black pepper, to taste

Prepare the Filling: In a medium mixing bowl, combine the crumbled feta cheese, chopped roasted red peppers, chopped spinach, sliced Kalamata olives, and dried oregano. Season lightly with salt and freshly ground black pepper, adjusting to your taste. Mix until well combined.

    Spread the Hummus: Take one whole wheat tortilla and spread approximately ¼ cup of hummus evenly over one side of the tortilla. This creates a flavorful base for your quesadilla.

      Layer the Filling: On top of the hummus, evenly distribute a generous portion of the Mediterranean filling you prepared. Follow this by sprinkling a handful of shredded mozzarella cheese over the filling; this will help bind the quesadilla when cooked.

        Top it Off: Gently place a second tortilla on top of the filling, pressing it down lightly to ensure it sticks.

          Cook the Quesadilla: In a large skillet, heat 1 tablespoon of extra virgin olive oil over medium heat. Once hot, carefully place the assembled quesadilla into the skillet. Cook for about 3-4 minutes, or until the bottom tortilla is golden brown and the cheese starts to melt.

            Flip and Finish: Using a spatula, carefully flip the quesadilla to cook the other side. If needed, add the remaining tablespoon of olive oil to the skillet. Cook for an additional 3-4 minutes, or until the second side is also golden and crispy, ensuring the cheese is melted throughout.
