Ingredients

1 medium spaghetti squash

2 tablespoons olive oil

1 teaspoon garlic powder

1 teaspoon onion powder

Salt and pepper, to taste

1 pound ground turkey (or ground beef, if preferred)

1 jar (24 oz) marinara sauce (ideally low-sugar)

1 cup ricotta cheese

1 cup shredded mozzarella cheese

1/2 cup grated Parmesan cheese

1 tablespoon fresh basil, finely chopped (reserve extra for garnish)

1 teaspoon Italian seasoning

Red pepper flakes (optional, for added spice)

Instructions

Prepare the Spaghetti Squash: Preheat your oven to 400°F (200°C). Carefully slice the spaghetti squash in half lengthwise and scoop out the seeds. Drizzle 1 tablespoon of olive oil inside each half, then generously season with garlic powder, onion powder, salt, and pepper. Place the squash cut-side down on a parchment-lined baking sheet. Roast in the oven for 40-45 minutes, or until you can easily pierce the flesh with a fork and it is tender.

Cook the Meat: In a large skillet, heat the remaining tablespoon of olive oil over medium heat. Add the ground turkey to the skillet, cooking it until browned, while breaking it apart with a spatula. Season with salt, pepper, and Italian seasoning. Once fully cooked, drain any excess fat from the skillet if necessary.

Combine with Marinara: Pour the marinara sauce into the skillet with the cooked turkey. Stir well and reduce the heat, allowing the mixture to simmer gently for about 5 minutes so the flavors can meld together beautifully.

Prepare the Cheese Mixture: In a medium bowl, combine the ricotta cheese, half of the shredded mozzarella, and half of the grated Parmesan cheese. Add the chopped basil, then season with additional salt and pepper to taste, mixing until smooth and well-combined.

Assemble the Dish: Once the spaghetti squash is roasted and slightly cooled, use a fork to gently scrape out the insides, forming long strands that resemble spaghetti. In a large baking dish, combine the spaghetti squash strands with the meat sauce, mixing thoroughly to ensure all strands are coated. Drop spoonfuls of the ricotta cheese mixture over the top, then sprinkle the remaining mozzarella and Parmesan cheese evenly across the surface.

Bake: Transfer the baking dish to the preheated oven and bake for about 20 minutes, or until the cheese is nicely melted and bubbly. If you prefer a crispier top, switch the oven to broil for an additional 2-3 minutes, keeping a close eye to avoid burning.

Serve: Carefully remove the dish from the oven and allow it to cool slightly before serving. Garnish with additional fresh basil and a sprinkle of red pepper flakes for a kick, if desired.
