1/2 cup corn (use canned or frozen based on availability)

1/2 cup diced tomatoes (fresh or canned for convenience)

1/4 cup red onion, finely chopped for a flavorful kick

1 teaspoon ground cumin for warmth

1 teaspoon chili powder for spice

1/2 teaspoon garlic powder for depth

1 cup shredded cheese (cheddar or a Mexican blend for richness)

Prepare the Bell Peppers:

    - Start by rinsing the mini bell peppers thoroughly under running water. Using a sharp knife, carefully cut each pepper in half lengthwise. Remove the seeds and membranes to create a hollow boat. Lightly brush the insides with olive oil for an extra layer of flavor and set aside.

      Make the Filling:

        - In a spacious mixing bowl, combine the cooked quinoa, drained black beans, corn, diced tomatoes, finely chopped red onion, cumin, chili powder, garlic powder, and a bit of salt and pepper. Use a spatula or spoon to mix everything together until all the ingredients are well incorporated and the spices are evenly distributed.

          Stuff the Peppers:

            - Take each prepared pepper half and carefully spoon the quinoa mixture into it, packing it slightly to ensure that each boat is generously filled without overstuffing.

              Add Cheese:
