Ingredients

1 large baguette, sliced into 1-inch pieces

1 wheel of Brie cheese (approximately 8 ounces)

¼ cup honey

2 tablespoons fresh rosemary, finely chopped (or 1 tablespoon dried rosemary)

¼ cup chopped walnuts or pecans (optional)

1 tablespoon olive oil

Sea salt, to taste

Freshly ground black pepper, to taste

Balsamic glaze, for drizzling (optional)

Instructions

Preheat the Oven: Preheat your oven to 375°F (190°C) to ensure it's hot enough for baking the baguette slices.

Prepare Baguette Slices: On a baking sheet lined with parchment paper, arrange the sliced baguette pieces in a single layer. Using a pastry brush, lightly coat both sides of each slice with olive oil. Season with a sprinkle of sea salt and freshly ground black pepper to enhance flavor.

Bake the Baguette Slices: Place the baking sheet in the preheated oven and bake for approximately 5-7 minutes, or until the baguette slices are just toasted and lightly golden brown. Once done, remove from the oven and allow them to cool slightly.

Prepare the Brie: While the baguette slices are baking, cut the Brie cheese into small wedges or thin slices, ensuring that each piece will comfortably sit atop the baguette slices.

Assemble the Baguette Slices: Once the baguette slices have cooled, take each one and top it with a piece of Brie. Drizzle a small amount of honey over the cheese, followed by a sprinkle of finely chopped rosemary and optional nuts for added texture and flavor.

Bake Again: Return the assembled baguette slices to the oven and bake for an additional 7-10 minutes, or until the Brie melts and starts to bubble enticingly.

Finish with Glaze: Carefully remove the baking sheet from the oven. If you desire an extra touch of flavor, drizzle the hot Brie bites with balsamic glaze, enhancing the dish’s sweetness and complexity.

Serve: Serve the mini baked Brie stuffed baguette slices immediately while they are warm and gooey. The creamy, melted Brie pairs beautifully with the sweet honey and aromatic rosemary. These delightful bites make an excellent appetizer or finger food, perfect for gatherings or special occasions!
