Ingredients

1 ½ cups graham cracker crumbs

1/4 cup unsalted butter, melted

2 cups cream cheese, softened to room temperature

3/4 cup granulated sugar

1 teaspoon vanilla extract

1/2 cup sour cream

2 large eggs

2 ripe bananas, mashed until smooth

1/4 cup crushed pineapple, well-drained

1/4 cup chopped walnuts or pecans

Whipped cream, for topping

Chocolate syrup, for drizzling

Maraschino cherries, for garnish

Fresh sliced strawberries, for garnish

Instructions

Prepare the Crust:

    - Preheat your oven to 325°F (160°C).

      - In a medium-sized mixing bowl, combine the graham cracker crumbs with the melted butter. Stir until all crumbs are evenly coated with the butter.

        - Evenly press the crumb mixture into the bottoms of mini cheesecake pans or a standard muffin tin to create a solid crust. Bake in the preheated oven for 8-10 minutes until lightly golden. Once done, remove from the oven and allow to cool while you prepare the filling.

          Make the Cheesecake Filling:

            - In a large mixing bowl, use an electric mixer to beat the softened cream cheese together with the granulated sugar until the mixture is smooth and creamy, about 2-3 minutes on medium speed.

              - Add in the vanilla extract and sour cream, mixing until completely combined and smooth.

                - Incorporate the eggs one at a time, ensuring each egg is fully mixed in before adding the next.

                  - Gently fold in the mashed bananas, crushed pineapple, and chopped walnuts until all ingredients are well combined, taking care not to overmix.

                    Assemble the Cheesecakes:

                      - Spoon the prepared cheesecake filling over the cooled crusts in the pans, filling each compartment about three-quarters full to allow for some rising.

                        - Return the cheesecakes to the oven and bake for 20-25 minutes. They should be set around the edges, with a slight jiggle in the center.

                          - Turn off the oven and leave the cheesecakes inside with the door slightly ajar for approximately 30 minutes. This gradual cooling helps prevent cracking.

                            Chill:

                              - Carefully remove the cheesecakes from the oven and allow them to cool to room temperature.

                                - Once they are at room temperature, refrigerate the cheesecakes for at least 4 hours, but overnight is preferred to ensure they firm up properly.

                                  Serve:

                                    - Before serving, top each mini cheesecake with a generous dollop of whipped cream for an indulgent finish.

                                      - Drizzle with rich chocolate syrup and crown with a maraschino cherry and fresh sliced strawberries to recreate the classic banana split presentation.

                                        Enjoy:

                                          - Serve your Mini Banana Split Cheesecakes chilled, and savor the delightful blend of creamy and fruity flavors!
