2 medium zucchinis

1 cup shredded cooked chicken (rotisserie chicken is a convenient option)

1/2 cup BBQ sauce (choose your favorite flavor)

1/2 cup shredded cheese (cheddar or mozzarella are great choices)

1/4 cup diced red onion

1/4 cup corn (use canned or thawed frozen corn)

1 tablespoon olive oil

Salt and pepper to taste

Fresh cilantro for garnish (optional)

Instructions
 

Preheat the Oven: Set your oven to 375°F (190°C) to get it ready for baking.

    Prepare the Zucchinis: Slice each zucchini in half lengthwise. Carefully scoop out the seeds and some of the flesh using a small spoon, creating a hollowed-out “boat”. Ensure you leave about 1/4 inch of zucchini at the bottom to support the filling.

      Season the Zucchini: Brush the insides of each zucchini half with olive oil. Sprinkle with salt and pepper to enhance their natural flavor. Place the zucchini cups cut-side up on a baking sheet.

        Mix the Filling: In a mixing bowl, combine the shredded chicken, BBQ sauce, diced red onion, corn, and half of the shredded cheese. Stir all the ingredients together until they are well blended and coated with BBQ sauce.

          Fill the Zucchini Cups: Spoon the BBQ chicken mixture generously into each zucchini half, mounding it slightly on top for a hearty filling.
