Ingredients

1 can (8 oz) refrigerated biscuit dough

1 cup shredded mozzarella cheese

1/2 cup breakfast sausage, cooked and crumbled

1/4 cup diced bell pepper (any color)

1/4 cup diced onion

1/2 teaspoon Italian seasoning

1/4 teaspoon garlic powder

1/4 teaspoon black pepper

1 large egg (for egg wash)

Marinara sauce for dipping (optional)

Instructions

Preheat the Oven: Start by preheating your oven to 375°F (190°C). Prepare a baking sheet by lining it with parchment paper or lightly greasing it to prevent sticking.

Prepare the Biscuit Dough: Carefully open the can of biscuit dough and separate it into 8 individual biscuits. Using your hands, gently flatten each biscuit into a small round disc, aiming for a thickness of about 1/4 inch.

      Assemble the Melts:

        - Take half of the flattened biscuits and sprinkle about a tablespoon of shredded mozzarella cheese on top of each.

          - Equal portions of cooked breakfast sausage, diced bell pepper, diced onion, Italian seasoning, garlic powder, and black pepper should be added on top of the cheese.

            - Follow with another tablespoon of mozzarella cheese over the toppings for extra cheesiness.

              - Lastly, place the remaining flattened biscuits on top of the prepared stacks to form mini pizza sandwiches.

Seal the Edges: With a fork, gently press down around the edges of each biscuit pizza to seal them well, ensuring the ingredients are enclosed.

Egg Wash: In a small bowl, beat the egg until smooth. Using a pastry brush, apply the egg wash generously on the tops of the biscuit melts to give them a golden, glossy finish when baked.

Bake: Arrange the assembled mini breakfast biscuit pizza melts on the prepared baking sheet. Bake them in the preheated oven for 12-15 minutes, or until the tops turn a beautiful golden brown and the cheese is perfectly melted.

Serve: Once baked, remove the biscuit melts from the oven and allow them to cool slightly. Serve them warm, alongside marinara sauce for dipping, if desired.
