6 small whole wheat tortillas or lettuce leaves (for a low-carb option)

½ cup shredded carrots

½ cup celery, finely chopped

½ cup blue cheese or ranch dressing (for serving)

Fresh parsley or cilantro, chopped (for garnish)

Prepare the Tofu: Start by cutting the pressed tofu into small, 1-inch cubes. After cutting, gently pat the tofu cubes dry with a paper towel to eliminate any excess moisture, ensuring better absorption of flavors.
