1 lb (450g) ground chicken

2 cups fresh spinach, chopped

1/2 cup cream cheese, softened to room temperature

1/2 cup shredded mozzarella cheese

1/4 cup grated Parmesan cheese

1/2 teaspoon garlic powder

1/2 teaspoon onion powder

1/2 teaspoon Italian seasoning

Salt and black pepper, to taste

1 package of refrigerated biscuit dough (about 10 biscuits)

Olive oil, for greasing the muffin skillet

Optional: Red pepper flakes, for garnish

Instructions
 

Preheat Your Skillet: Preheat your oven to 375°F (190°C). Lightly grease a muffin skillet with a drizzle of olive oil to prevent sticking.

    Cook the Chicken: In a large skillet over medium heat, add the ground chicken. Cook, stirring occasionally, until the chicken is browned and cooked through, about 5-7 minutes. Drain any excess fat to keep the filling from becoming greasy.

      Make the Filling: Add the chopped spinach to the skillet with the cooked chicken. Allow it to wilt for about 1-2 minutes. Then, stir in the softened cream cheese, shredded mozzarella, grated Parmesan, garlic powder, onion powder, Italian seasoning, salt, and black pepper. Cook for an additional 3-4 minutes, stirring until the cheeses are melted and well incorporated with the chicken mixture. Remove the skillet from heat.

        Prepare the Dough: Open the package of refrigerated biscuit dough. Carefully separate the biscuits. Use your hands or a rolling pin to flatten each biscuit into a circle about 1/4-inch thick, ensuring they are wide enough to cover the muffin cup.

          Form the Cups: Gently press each flattened biscuit into the greased muffin cups, ensuring the dough covers the sides completely and leaves ample space for the filling in the center.

            Fill the Cups: Spoon the warm chicken and spinach filling into each biscuit cup, filling them generously without overflowing.
