8 slices of brioche bread

2 large eggs

1/2 cup whole milk

1 teaspoon pure vanilla extract

1 teaspoon ground cinnamon

2 tablespoons pure maple syrup

1/4 cup all-purpose flour

1 cup mixed berries (such as strawberries, blueberries, raspberries, and blackberries)

Butter or cooking spray for greasing the pan

Powdered sugar for dusting (optional)

Fresh mint leaves for garnish (optional)

Instructions
 

Prepare the Bread: Begin by cutting each slice of brioche into bite-sized cubes, approximately 1 inch in size. Set the cubes aside in a mixing bowl for easy access.

    Make the Batter: In a large mixing bowl, combine the eggs, whole milk, pure vanilla extract, ground cinnamon, and pure maple syrup. Whisk the ingredients together until the mixture is smooth and well blended.

      Coat the Cubes: Gently add the brioche cubes to the egg mixture, using a spatula to carefully toss and coat each piece. Allow the mixture to sit for about 5 minutes, giving the bread time to absorb the flavors.

        Add Flour: After the bread has soaked, sprinkle the all-purpose flour over the mixture. Use a spatula to gently fold the flour into the bread and egg mixture, ensuring an even and thicker coating on all pieces.

          Preheat the Pan: Heat a large non-stick skillet or griddle over medium heat. Add a small amount of butter or a light spray of cooking spray to coat the surface of the pan evenly.

            Cook the Bites: Once the pan is hot, add the bread cubes in small batches, making sure not to overcrowd them. Cook each batch for about 3-4 minutes on one side, then flip and cook for another 3-4 minutes, or until the bites are golden brown and crispy all around. Repeat with the remaining bread cubes.
