2 boneless, skinless chicken breasts

2 tablespoons extra virgin olive oil

1 tablespoon fresh lemon juice

2 cloves garlic, minced

1 teaspoon dried oregano

Salt and freshly ground black pepper, to taste

4 whole wheat pita breads

1 cup cucumber, finely diced

1 cup cherry tomatoes, halved

1/2 medium red onion, thinly sliced

1/2 cup feta cheese, crumbled

1/4 cup Kalamata olives, pitted and sliced

Fresh parsley, chopped (for garnish)

Tzatziki sauce (for serving)

Instructions
 

Prepare the Chicken Marinade: In a medium bowl, combine the olive oil, fresh lemon juice, minced garlic, dried oregano, and a pinch of salt and pepper. Add the chicken breasts, ensuring they are thoroughly coated with the marinade. Cover the bowl with plastic wrap and refrigerate. Allow the chicken to marinate for at least 30 minutes, but ideally aim for 2 hours for enhanced flavor.

    Cook the Chicken: Heat a grill pan or a large skillet over medium-high heat. Once hot, remove the chicken from the marinade and allow any excess marinade to drip off.
