Ingredients

8 slices of bread (choose from sourdough, whole grain, or classic white)

8 ounces of cheddar cheese, thinly sliced

1 cup cherry tomatoes

2 tablespoons unsalted butter, softened to room temperature

1 teaspoon garlic powder

Salt and pepper, to taste

Fresh basil leaves, for optional garnish

8 bamboo skewers (approximately 6 inches in length)

Instructions

Prepare the Bread and Cheese:

Begin by cutting each slice of bread into quarters, yielding small squares. Assemble mini sandwiches by placing one slice of cheese between two squares of bread. Continue this process until all the cheese and bread slices have been transformed into mini sandwiches.

      Make the Garlic Butter:

In a small mixing bowl, combine the softened unsalted butter, garlic powder, salt, and pepper. Stir the ingredients together until the mixture is cohesive and smooth.

          Assemble the Skewers:

Take a bamboo skewer and thread on a cherry tomato first, followed by one of your mini grilled cheese sandwiches. Repeat the layering, adding another mini sandwich and finishing with a second cherry tomato on top. Each skewer should feature two mini sandwiches and two tomatoes.

              Preheat the Grill or Skillet:

Heat your grill or skillet over medium heat. For an added visual appeal, consider using a grill pan which will impart lovely grill marks onto the skewers.

                  Grill the Skewers:

With the assembled skewers ready, generously brush the garlic butter mixture over all sides of each skewer. Grill them for about 3-4 minutes on each side, ensuring the bread turns golden brown and crispy while the cheese inside melts to perfection.

                      Garnish and Serve:

Once grilled, carefully remove the skewers from the heat and allow them to cool slightly. For an additional burst of flavor, top the skewers with fresh basil leaves if desired. Serve your delightful skewers immediately, ideally alongside a side of marinara sauce or your favorite dipping sauce for an indulgent treat.
