1 lb ground beef or turkey

1 cup diced hatch green chilies (use fresh or roasted for depth of flavor)

1 small onion, finely chopped

2 cloves garlic, minced

1 tsp ground cumin

1 tsp smoked paprika

½ tsp chili powder

Salt and pepper, to taste

12 mini corn tortillas

1 cup shredded cheddar cheese

1 cup shredded lettuce

½ cup diced tomatoes

1 ripe avocado, sliced

Fresh cilantro, for garnish

Lime wedges, for serving

Prepare the Filling: In a large skillet, add a drizzle of oil and heat over medium heat. Once hot, add the chopped onion. Sauté for about 3-4 minutes or until the onion is translucent. Then, add the minced garlic and cook for an additional minute until it becomes fragrant, ensuring not to burn it.
