1 cup cooked quinoa (cooled)

1 can (15 oz) black beans, rinsed and drained

1 cup corn kernels (fresh, frozen, or canned)

1 red bell pepper, diced

1/2 cup red onion, finely chopped

1/4 cup fresh cilantro, chopped

1 teaspoon ground cumin

1 teaspoon chili powder

1/2 teaspoon garlic powder

Salt and pepper, to taste

1/2 cup shredded cheddar cheese (optional: dairy-free alternative)

1 ripe avocado, sliced (for topping)

Lime wedges, for serving

Prepare the Quinoa: If your quinoa isn’t cooked yet, rinse it thoroughly under cold water to remove any bitterness. Cook according to the package instructions, then allow it to cool completely.

    Mix the Base: In a large mixing bowl, combine the cooled quinoa, rinsed black beans, corn, diced red bell pepper, finely chopped red onion, and freshly chopped cilantro.

      Season: Sprinkle in the ground cumin, chili powder, garlic powder, and season with salt and pepper. Stir the mixture well to ensure all ingredients are evenly coated with the spices.

        Incorporate Cheese: Gently fold the shredded cheddar cheese into the mixture, making sure it’s nicely distributed throughout for flavor in every bite.
