Ingredients

1 cup fresh spinach, finely chopped

1 cup canned artichoke hearts, thoroughly drained and finely chopped

1/2 cup cream cheese, softened to room temperature

1/4 cup sour cream

1/4 cup mayonnaise

1/2 cup shredded mozzarella cheese

1/4 cup grated Parmesan cheese

1 garlic clove, finely minced

1/4 teaspoon red pepper flakes (optional, for a hint of heat)

Salt and freshly cracked black pepper, to taste

1 package (1 lb) frozen puff pastry, fully thawed

1 egg, beaten (for egg wash)

Fresh parsley, finely chopped (for garnish)

Instructions

Preheat the Oven: Preheat your oven to 400°F (200°C). As it heats, prepare a baking sheet by lining it with parchment paper for easy cleanup.

Prepare the Filling: In a medium mixing bowl, thoroughly combine the chopped spinach, drained and chopped artichoke hearts, softened cream cheese, sour cream, mayonnaise, shredded mozzarella, grated Parmesan cheese, minced garlic, red pepper flakes (if using), along with a pinch of salt and black pepper. Mix until the ingredients are well blended and a uniform filling is achieved.

Roll Out the Puff Pastry: On a lightly floured surface, gently roll out the thawed puff pastry sheets to approximately 1/8 inch thickness. Using a sharp knife or pizza cutter, cut the pastry into squares measuring about 3 inches by 3 inches.

Fill the Pastry: Take one puff pastry square and place approximately one tablespoon of the spinach-artichoke filling in the center. Be cautious not to overfill, as this will make sealing difficult.

Shape the Bites: Carefully fold the corners of the pastry square over the filling to form a pocket or parcel. Pinch the edges together firmly to seal, and position the bites seam-side down on the prepared baking sheet.

Apply Egg Wash: Using a pastry brush, lightly coat the tops of each puff bite with the beaten egg. This will create a beautifully golden-brown finish during baking.

Bake: Place the baking sheet in the preheated oven and bake for 15 to 20 minutes. Continue baking until the puff pastry is puffed up, golden, and crispy.

Garnish and Serve: Once baked, remove the bites from the oven and allow them to cool slightly. Before serving, sprinkle the tops with freshly chopped parsley for a burst of color and flavor.

Enjoy: Serve these delightful warm spinach artichoke bites at your next gathering as a crowd-pleasing appetizer or enjoy them as a delightful snack any time!
