6 large eggs

1 cup shredded cheddar cheese

1/2 cup diced bell peppers (a mix of red and green)

1/2 cup cooked and crumbled breakfast sausage (or diced bacon)

1/4 cup milk

Salt and pepper, to taste

2 tablespoons chopped fresh chives or green onions (for garnish)

Preheat the Oven: Set your oven to 425°F (220°C) to get it nice and hot for baking the nests.

    Prepare the Muffin Tin: Lightly coat a standard muffin tin with olive oil spray to ensure the tater tots don't stick.

      Shape the Tater Tot Nests: In a mixing bowl, microwave the frozen tater tots for about 1-2 minutes until slightly softened, making them easier to mold. Place 3-4 tater tots into each muffin cup. Use your fingers to press them down and shape them into nests that line the bottom and sides of each cup. Bake the nests in the preheated oven for 15 minutes, or until they turn golden brown and crispy.

        Prepare the Egg Filling: While the nests are baking, crack the eggs into a mixing bowl. Whisk them together with milk, salt, and pepper until well blended. Stir in the diced bell peppers, crumbled sausage (or bacon), and half of the shredded cheese until well combined.
