Ingredients

2 English muffins, split in half

1 can (5 oz) of tuna, drained and flaked

1 ripe avocado, peeled and mashed

1 tablespoon mayonnaise

1 tablespoon Greek yogurt (optional for creaminess)

1 tablespoon Dijon mustard

1 tablespoon fresh lemon juice

1/4 cup finely diced red onion

1/4 cup freshly chopped cilantro (or parsley)

Salt and freshly ground black pepper, to taste

1 cup shredded cheddar cheese (or cheese of your choice)

Red pepper flakes (optional, for a spicy garnish)

Instructions

Preheat the Oven: Set your oven to 375°F (190°C) so it’s ready when you need to bake the muffins.

Prepare the Tuna Mixture: In a medium-sized mixing bowl, combine the drained and flaked tuna, mashed avocado, mayonnaise, Greek yogurt (if using), Dijon mustard, fresh lemon juice, diced red onion, and chopped cilantro. Mix thoroughly until all ingredients are well blended. Season the mixture with salt and freshly ground black pepper to taste, adjusting according to your preference.

Toast the English Muffins: Arrange the split English muffins on a baking sheet with the cut sides facing up. Place them in the preheated oven for about 5 minutes, or until they are lightly toasted and golden.

Assemble the Melts: Carefully remove the toasted muffins from the oven. Generously spoon the prepared tuna and avocado mixture onto each half of the muffins, spreading it evenly.

Add Cheese: Sprinkle a portion of shredded cheese over each muffin half, adjusting the amount based on how cheesy you want your melts to be.

Broil for Finishing Touch: Place the assembled muffin melts back in the oven and switch to the broil setting. Broil for 2-3 minutes, keeping a close eye on them to ensure the cheese melts and bubbles but doesn't burn.

Serve and Enjoy: Once the cheese is perfectly melted, remove the muffin melts from the oven. Allow them to cool for a minute before serving, then sprinkle with optional red pepper flakes for an extra zesty kick. Serve warm and dive into your delightful Mini Tuna Avocado English Muffin Melts!
