½ teaspoon baking soda

½ teaspoon salt

1 cup whole milk

½ cup vegetable oil

2 large eggs, at room temperature

1 teaspoon pure vanilla extract

For the Strawberry Cake:

2 cups all-purpose flour

1 ½ cups granulated sugar

½ cup unsalted butter, softened to room temperature

1 cup strawberry puree (fresh or frozen)

3 ½ teaspoons baking powder

½ teaspoon salt

1 teaspoon almond extract

For the Frosting:

3 cups unsalted butter, softened to room temperature

9 cups powdered sugar, sifted to remove lumps

½ cup whole milk

1 tablespoon pure vanilla extract

Red food coloring (optional, for strawberry frosting)

Instructions
 

Prepare the Cake Batters:

    - Preheat your oven to 350°F (175°C). Grease and flour three 9-inch round cake pans to prevent sticking.

      - For the vanilla cake, in a large mixing bowl, cream together the softened butter and granulated sugar until the mixture is light and fluffy. Add the eggs, one at a time, mixing thoroughly after each addition. Stir in the milk and vanilla extract. Sift in the flour, baking powder, and salt, mixing until just combined.

        - For the chocolate cake, repeat the same creaming process, replacing the flour with cocoa powder for a rich chocolate flavor. Combine the dry and wet ingredients gently until just combined.

          - For the strawberry cake, cream the softened butter and sugar. Then, mix in the eggs and strawberry puree, followed by the almond extract. Combine with the dry ingredients similarly, mixing until just incorporated.

            Bake the Cakes:

              - Evenly divide the batters among the prepared cake pans.

                - Bake in the preheated oven for 25-30 minutes. Check for doneness by inserting a toothpick into the center—if it comes out clean, the cakes are ready.

                  - Allow the cakes to cool in their pans for about 10 minutes. Then, gently turn them out onto wire racks to cool completely.

                    Make the Frosting:

                      - In a large mixing bowl, beat the softened butter until it is creamy. Gradually add the sifted powdered sugar, alternately with the milk, mixing until you achieve a smooth and spreadable consistency. Stir in the vanilla extract and continue to beat until fluffy. If you'd like pink strawberry frosting, separate the frosting into three bowls and tint one with red food coloring.

                        Assemble the Cake:

                          - Start by placing the vanilla cake layer on a serving plate. Spread a generous layer of vanilla frosting over the top. Add the chocolate cake layer and spread chocolate frosting over it. Top with the strawberry cake layer, finishing with a layer of frosting on the entire outside of the cake to create a smooth finish.
