Ingredients

1 ½ cups graham cracker crumbs

½ cup unsalted butter, melted

⅓ cup granulated sugar

1 can (14 oz) sweetened condensed milk

½ cup fresh lemon juice (approximately 2-3 lemons)

Zest of 2 lemons

1 teaspoon vanilla extract

1 cup heavy whipping cream

2 tablespoons powdered sugar

Lemon slices and fresh mint leaves for garnish

Instructions

Prepare the Crust:

    - In a medium-sized mixing bowl, blend together the graham cracker crumbs, melted unsalted butter, and granulated sugar until the mixture has the texture of wet sand.

      - Firmly press this mixture into the bottom and up the sides of a 9-inch pie dish. Use the back of a measuring cup or the bottom of a glass to pack it tightly and evenly. Once done, place the crust in the refrigerator to chill while preparing the filling.

        Make the Filling:

          - In a large mixing bowl, whisk together the sweetened condensed milk, freshly squeezed lemon juice, lemon zest, and vanilla extract until the mixture is smooth and all ingredients are well combined.

            Whip the Cream:

              - In a separate bowl, use an electric mixer to whip the heavy cream and powdered sugar together. Continue whipping until stiff peaks form, which should take roughly 2-3 minutes.

                Combine the Mixtures:

                  - Carefully fold half of the whipped cream into the lemon filling mixture with a spatula until fully incorporated. Next, gently fold in the remaining whipped cream until there are no visible streaks, ensuring you retain the light and airy texture of the cream.

                    Assemble the Pie:

                      - Pour the luscious lemon filling into the chilled graham cracker crust, smoothing the top with a spatula for an even surface. Cover the pie with plastic wrap or aluminum foil and refrigerate for a minimum of 4 hours to allow it to set (overnight is ideal for best results!).

                        Serve:

                          - After the pie has set, slice into wedges and serve each piece garnished with a lemon slice and a sprig of fresh mint for a refreshing touch.
