Ingredients

1 lb ground beef

1 cup uncooked long-grain rice

2 cups beef broth

2 cups fresh broccoli florets

1 medium onion, diced

3 cloves garlic, minced

1 tsp paprika

1 tsp garlic powder

1/2 tsp black pepper

1/2 tsp salt

1 1/2 cups shredded cheddar cheese (divided)

2 tbsp olive oil

Fresh parsley, chopped (for garnish)

Instructions

Sauté the Aromatics: In a large skillet or pan, heat the olive oil over medium heat. Once the oil shimmers, add the diced onion and minced garlic. Sauté for about 3-4 minutes until the onion becomes translucent and fragrant.

Brown the Beef: Increase the heat to medium-high and add the ground beef to the skillet. Using a spatula, break the beef into small pieces. Cook for approximately 5-7 minutes or until the beef is browned and fully cooked. If there’s excess fat, drain it from the pan.

Add the Seasonings: Sprinkle in the paprika, garlic powder, black pepper, and salt. Stir well to ensure that the seasonings are evenly distributed throughout the beef mixture.

Incorporate the Rice: Add the uncooked rice to the skillet, followed by the beef broth. Gently stir to combine, ensuring that the rice is well submerged in the broth.

Fold in the Broccoli: Carefully add the broccoli florets into the skillet, folding them into the rice and beef mixture to promote even cooking.

Simmer the Mixture: Increase the heat to high until the mixture reaches a boil. Once boiling, reduce the heat to low, cover the skillet with a lid, and let it simmer for about 15 minutes. During this time, the rice will absorb the liquid and become tender.

Add the Cheese: After 15 minutes, remove the lid and sprinkle 1 cup of shredded cheddar cheese evenly over the top. Replace the lid and let it sit for 2-3 additional minutes, allowing the cheese to melt and become gooey.

Serve & Garnish: Once the cheese is melted, remove the skillet from heat. Gently fluff the rice with a fork to mix the cheese throughout. Garnish with freshly chopped parsley for a pop of color. Serve warm and relish this hearty one-pan meal!
