1 lb ground beef

1 medium onion, finely chopped

3 cloves garlic, minced

1 bell pepper, diced (any color)

1 cup long-grain white rice, rinsed and drained

2 cups beef broth

1 (14.5 oz) can diced tomatoes with green chilies, undrained

1 cup frozen corn

1 teaspoon chili powder

½ teaspoon ground cumin

Salt and freshly ground black pepper, to taste

2 cups shredded cheddar cheese

2 tablespoons olive oil

Fresh cilantro or parsley, for garnish (optional)

Instructions
 

Sauté the Base: In a large skillet, heat the olive oil over medium heat. Add the finely chopped onion and sauté for about 3-4 minutes until it becomes translucent. Next, stir in the minced garlic and diced bell pepper, cooking for an additional 2-3 minutes until both have softened and released their aromas.

    Brown the Beef: Increase the heat to medium-high and add the ground beef to the skillet. Season generously with salt, freshly ground black pepper, chili powder, and ground cumin. Cook the beef for about 5-7 minutes, breaking it up with a wooden spoon, until it is browned and fully cooked.

      Add Rice and Liquid: Incorporate the rinsed and drained rice into the skillet, followed by the beef broth and the undrained can of diced tomatoes with green chilies. Stir well and bring the mixture to a boil. Once boiling, reduce the heat to low and cover the skillet with a lid.

        Simmer: Let the mixture simmer for approximately 15-20 minutes, or until the rice is tender and has absorbed most of the liquid. Stir occasionally to prevent the rice from sticking to the bottom of the skillet. During the last 5 minutes of cooking, gently fold in the frozen corn.

          Cheesy Finish: Once the rice is cooked and the liquid is mostly absorbed, remove the skillet from the heat. Evenly sprinkle the shredded cheddar cheese over the top of the beef and rice mixture. Cover the skillet with the lid for a few minutes to allow the cheese to melt perfectly.

            Garnish and Serve: Using a fork, fluff the beef and rice mixture to combine it thoroughly. If desired, sprinkle with fresh cilantro or parsley for a pop of color and flavor. Serve hot and enjoy!
