1 lb (450g) boneless, skinless chicken breasts, cut into bite-sized pieces

1 cup (190g) long-grain white rice, thoroughly rinsed

2 cups (475ml) low-sodium chicken broth

2 cups (150g) fresh broccoli florets (or you can use frozen)

1 cup (100g) shredded sharp cheddar cheese

1 small onion, finely diced

2 cloves garlic, minced

1 teaspoon paprika

½ teaspoon salt (or to taste)

¼ teaspoon black pepper

2 tablespoons olive oil

1 tablespoon unsalted butter

Fresh parsley, chopped, for garnish

Instructions
 

Sauté the Chicken: In a large skillet over medium heat, add the olive oil and butter. Once the butter is melted and the oil is shimmering, add the diced chicken to the pan. Season the chicken with salt, pepper, and paprika. Cook for about 6-7 minutes, stirring occasionally, until the chicken is browned and no longer pink in the center. Remove the chicken from the skillet and set it aside on a plate.

    Cook the Aromatics: In the same skillet, add the diced onion. Sauté for approximately 3-4 minutes until the onions become translucent and fragrant. Next, add the minced garlic and sauté for another minute, allowing the garlic to release its aromatic flavor.

      Add Rice & Broth: Stir the rinsed rice into the sautéed onions and garlic. Pour in the chicken broth, ensuring everything is well combined. Bring the mixture to a gentle simmer, making sure to scrape the bottom of the pan to loosen any flavorful browned bits from the chicken.
